These Korean BBQ meatball rice bowls take 30 minutes from start to finish, with browned beef meatballs and warm rice under a spicy-sweet glaze. I make them on busy nights when a bowl dinner needs to feel like dinner, and cold cucumber keeps the heat in check (especially with a little extra sauce).
I use fresh garlic and ginger, and I stop mixing as soon as the meatball mixture comes together because working it longer turns the meatballs tough and rubbery. I make the balls about 1-inch wide, then brown them for 8 to 10 minutes in the skillet. Let the sauce get thick enough to coat the back of a spoon before the meatballs go back in, or it'll run off into the rice.
Build each bowl with warm rice and glazed meatballs. Add cucumber and carrots, then scatter green onions over the top and spoon the last of the skillet sauce over everything.
